Are you throwing money down the drain?

Owners and managers of hotels, bars and restaurants can now uncover valuable cost savings, following the launch of a series of free factsheets from sustainability experts Envirowise.

The average UK restaurant disposes of more than 100 tonnes of waste each year, 75% of which is recyclable. Yet simple steps could help improve resource efficiency and reduce the cost of waste collections.
 
The practical factsheets cover a range of business areas including Food Preparation, Drinks Service, Guest Room Facilities and Grounds Maintenance.
 
They offer advice on a range of topics from energy use to water efficiency, including the benefits of using of flow restrictors on taps or water displacement devices in toilet cisterns. For premises using cooking or refrigeration equipment, careful monitoring of heating and cooling processes is also essential to ensure energy – and money – is not being lost unnecessarily.
 
Michael Savage of Envirowise commented: "Reducing your environmental impact is not always top of the priority list when running a busy restaurant or hotel. However, we have provided some quick tips to get you thinking about how simple steps could lead to big savings. For example, changing the way you order certain products, or requesting reduced or re-usable packaging from suppliers could help reduce the volume of waste heading into the bin. Taking a resource efficient approach to the way you run your premises will also appeal to increasingly environment-savvy customers."
 
To get the most out of the Tips provided in the factsheets Envirowise recommends considering the following:
 
  • Ensure all staff are aware of the environmental steps you are taking
  • Always look to reduce and reuse your resources, before you recycle them
  • Set up Key Performance Indicators to track your progress in cutting unnecessary resource use
  • Monitor water and energy use closely, and buy new equipment with water and energy efficient features in mind
