BPEX produces ‘Value for Money Pork Ideas’ leaflet for chefs

To demonstrate the versatility and value of pork, BPEX has produced a new four page leaflet, ‘Value for Money Pork Ideas’ featuring a range of added value pork cuts, along with suggested cooking methods and meal ideas for chefs.

For example, shoulder or collar steaks are ideal alternatives for mixed grills, while traditional dishes such as faggots and terrines using offal and pig's head generate excellent returns.

BPEX foodservice trade manager, Tony Goodger, said: "We get regular requests from chefs and contract caterers who are looking for ideas to produce more cost effective meat-based meals without compromising on quality. 

"Assured pork, which includes pork and pig meat products carrying the Red Tractor logo, is an incredibly versatile and economical option, particularly when using cuts from the forequarter. In addition, research tells us that customers are increasingly opting for pork when eating out.

"Slow cooked belly pork can produce the ultimate indulgence meal, while collar makes for a great roast or it can be pulled apart to make tasty sandwich fillings. Pork is ideal for many types of dish or menu, but do make sure you are sourcing from an assured supply chain such as the Assured Food Standards Red Tractor scheme, and tell your customers that you are."
