BPEX publishes Quality Assured Red Tractor pork recipes for Christmas

A new leaflet featuring Quality Assured Red Tractor pork recipes, that are said to be ideal for chefs and caterers during the festive season, has just been published by BPEX.

The leaflet 'A Chefs Guide to Pork in the Festive Season' is designed to provide advice and inspiration to help chefs as they begin to prepare for the busiest time of the year

The booklet includes dishes such as 'boneless rolled pork roast with baked red apples and apple sauce', 'chunky pork & cider pies' and 'roasted gammon with mulled wine, cranberry & cinnamon glaze'.

BPEX foodservice trade manager, Tony Goodger, said: "The run up to Christmas Day is an incredibly hectic time for chefs, often with large numbers to cater for, so cuts of meat that are quick and easy to cook such as pork steaks, or cuts that can be pre-cooked and regenerated such as pork belly, make ideal menu items.

"As well as being extremely versatile, Quality Assured pork is great value for money and with many outlets running fixed-price menus during Christmas and New Year period it offers great profit potential."
