The big contract players inevitably share a sizeable chunk of the business, with Olympic veteran catering provider Aramark earmarked to feed athletes in the Olympic Village and service the sailing events venue in Weymouth.
Compass will be working at a number of stadia and event venues, including ExCeL, Earls Court, Millennium Stadium, Wembley Arena and the City of Coventry Stadium.
The UK's largest independent caterer BaxterStorey has been chosen to provide the foodservice at the main Olympic media centre.
Catering at the Olympic Park in Stratford is divided into north and south, with Amadeus, a division of the NEC Group, selected to provide services in the northern part of the park and Sodexo working in the south plus at other venues including Hampden Park, St James Park Royal Artillery Barracks, Lords.
Sodexo's corporate hospitality package arm Prestige Ticketing will be responsible for looking after visitors to the Olympic Hospitality Centre.
LOCOG CEO Paul Deighton says that with 15,000 athletes, more than 20,000 media, 70,000 volunteers and about 100,000 workers involved including contractors, alongside millions of ticket holders, the logistical management of the London 2012 venues across the Olympic Games and Paralympic Games is a major challenge.
It is expected that 14 million meals will be served at Games-time, with 19 days of competition across 34 competition venues for the Olympic Games and 11 days of competition across 21 competition venues for the Paralympic Games.
"People will view their experience of London 2012 in many different ways – including how good the food was.
"We have already set out our vision for food provision and the appointment of these companies is the next step in delivering on this.
"Our Tier one catering partners will work with a number of smaller caterers to help deliver key parts of their catering offer, and work with a multitude of large , medium and small food producers to showcase the best of British food.
"The work done by our catering contractors will be largely unsung by many, but is vital and everyone in the organising committee recognise their vital role in delivering the Games. This is a massive piece of project management, but with these companies on board we are well set to deliver Games that the country can be proud of."
