Cornwall College hosts sea fish masterclass

More than 20 local restaurateurs and chefs were recently invited to a fish masterclass at Cornwall College.

The College invited St Ives based Matthew Stevens, a fresh fish and seafood specialist, to deliver the masterclass as part of Adult Learners' Week (17-23 May).

 

Stuart Mathieson, head of hospitality commented: "Cornwall is about fish, and fish is a big issue here, almost every restaurant in the county serves local fish  and we need to look hard at sustainability."

 

Matthew Stevens commented on the aims of his masterclass: "Sustainability, responsible fishing and responsible buying, that's what we are trying to promote. We're talking to chefs and other interested parties to help them to manage their kitchens and their menus, to introduce alternative fish."

 

Professional chef Nick Taylor explained his reasons behind attending the event: "I came because I'm interested in the sustainability of Cornish stock, I wanted to know which fish were really endangered and more about the quotas. I also wanted to hear Matthew's thoughts on using locally farmed fish."

 

Mr Stevens concluded: "Education is the key; these days, people are more interested in the provenance of their food and the more we can encourage that, the brighter of the fishing industry will look."
