

The seminars, entitled Game Recognition and Preparation, are masterclasses in different species of wild game available to chefs in the
Jose Souto, college chef lecturer and game expert, will be hosting both classes. He will bring together examples of all types of game as well as giving an insight into where game can be found, what they eat and what makes them special for British menus.
Souto said: "People are now eating more game than ever because of the work of organisations like The Countryside Alliance and Game to Eat, who are promoting game as an easily useable and readily available commodity.
