

The first class, which kicks off on 12 October from 10.00am to 4.30pm, focuses on making traditional and contemporary Italian dishes.
There will also be a talk by owner Giancarlo Caldesi on running an Italian restaurant, covering topics such as gross profit, food costs and how to keep costs down e.g. using certain cuts of meat for different Italian dishes.
Meanwhile the second session will be held on 19 October from 10.00am to 4.30pm and will look at topics such as pastry making, Italian biscuits, plated desserts, meringues and chocolate making. This session will be hosted by Stefano Borella, patisserie chef at Caffe Caldesi.
Each class costs £270 but those looking to book both courses will be charged a total of £252.
