The competition is a long established event initially created to celebrate the start of the native oyster season, and is now a significant competition that identifies the UK's finest (and fastest) oyster openers.
Contestants are required to open and display 30 native oysters as quickly as possible.
Entries will be judged by a panel of seafood experts and chefs, according to the Galway International Festival rules.
The winner – The Tabasco British Oyster Opener of The Year will then represent the UK in the World Oyster Opening Championship in Galway, Ireland.
This year's championship will take place at Bentley's Oyster Bar and Grill, 11-15 Swallow Street, London on Wednesday 1st September.
Applications are now open, so keen shuckers should contact Tess Robinson at Food Matters on 020 7371 6466 or via email tess@foodmatters.co.uk for further information as soon as possible.
The event is not open to the public and is invitation only, those interested in attending should also contact Tess Robinson.
