With magnificent views of the city and the Firth of Forth, the Partners' Dining Room (PDR) at John Lewis' Edinburgh store serves upwards of 500 meals a day starting from 9.30 in the morning. The 180-seat dining room also caters for special events involving members of the public, including fashion shows and perfumery evenings. Menu options range from the traditional - including local must-haves such as haggis - to "fusion" dishes like Loch Fyne mussels in a Thai sauce. Roz arranges for chefs to cook to order each day on a dedicated island theatre counter and she regularly arranges theme days. She and her 20-strong catering team are also responsible for vending machines and supplying a waitress-based food and drinks service to meeting rooms. She and her team have a gold Healthy Eating award for the food and the information given to diners.
