Teams of three have just one hour and 45 minutes to produce a three-course meal, which is judged on taste, presentation, teamwork, seasoning, culinary skills, working methods and overall balance.
The competition received its highest ever number of entries this year, with over 70 student teams from all over the UK bidding for the coveted title.
Four regional heats in January will determine the final 10 teams who will compete live during Hotelympia.
As well as being crowned the prestigious title, the winning student will also walk away with a set of knives and a week long placement to further their skills.
James Armitage, marketing director of Brakes, said: "Each year our Student Team Chef Challenge gets more and more competitive, and this year is no exception. Not only are the number of entries at a record high, but so too is the talent and skill this year."
