

The business is a fully integrated process from farming through to processing and will deliver benefits to the total trout category within all trade sectors.
The acquisition of Scot Trout & Salmon (and its earlier purchase of Silver Trout) means the Dawnfresh group now controls 85% of the trout business.
In addition to Scot Trout, Dawnfresh also acquired Scot Trout Farming (with 25 trout farms), plus the hot and cold smoking business of R&R Spink & Daniel's
Sweet Herring.
"We have the core competencies to grow the trout business and are developing the sustainability of our farmed trout business, with plans to deliver competitive advantage in genetics and broodstock which has a provenance the consumer can depend upon and we are developing a range of value added, trout products for all consumer needs in order to grow the pre-packed and counter product categories," said managing director Steve Flack.

With large rainbow trout being produced up to four kilos in size, salmon-style steaks are a new option and both hot and cold smoking processes are attracting huge interest.
Chairman Alastair Salvesen led a management buy out of Dawnfresh in 1983 and has since taken over Starfish and Mull of Kintyre Seafoods.
The company moved seriously into the trout sector four years ago when it acquired Silver Trout.
The company also has a 40% share of the coated scampi market and along with its core competence in coated fish plans to grow its position within this category.
