The Days Inn hotels will open on the site of the former Purple Hotels outlets, which have been closed since March 2009 when the Real Hotel Group went into administration.
They will be operated by Welcome Break under lease from Swayfields, the operator of EXTRA motorway services, where the hotels are located.
The hotels, Days Inn Peterborough (A1), Days Inn Cambridge (M11/A14) and Days Inn Stevenage North (A1) will all open on Monday July 13.
Welcome Break is rebranding the hotels and creating a total of 40 jobs.
The hotels will have a combined 215 bedrooms, including interconnecting family rooms, specially adapted rooms for people with disabilities and king doubles.
Welcome Break Hotels operations manager Darren Woodhouse, said: "The new hotels are in excellent locations and we believe they will appeal to both the commuting business guest and the leisure guest.
"They will bring the total number of Days Hotels operated by Welcome Break in the UK to 26, offering a total of 1,647 bedrooms."
The bedrooms at Peterborough, Cambridge and Stevenage will be a mix of smoking and non-smoking. All rooms are en-suite, air conditioned and feature a colour TV and tea and coffee making facilities.
